In general the answer is no, if you have other means to practice what you have learned in the courses. But if you do not have any access to improve your knowledge and use what you have learned then you must accept the offer of "Many institutes" that "are offering projects and charging different fees."
To Your Second Question:
"How to get real time project knowledge?"
I assume that you mean: How to get real (not real time) project knowledge? Like many things in life you only understand completely what you have learned by repeating and doing. And this will become your knowledge and skill. No one is a born expert in anything. Being an expert is always the result of hard work over a long period of time and there is no exception to the rule. This applies to you and everybody else.
