At the same time, SAP EHS appears to fit you well. Another factor is that SAP EHS is not as commercially successful on the market compared to other SAP modules and products at the current time and in a foreseeable future. It serves best your interest if you can combine the following: maintain your current position as Microbiologist and find an acceptable way to approach SAP EHS. There you then have a real opportunity to inspect and plan your future whether it is worth for you to pursue a career with SAP EHS.
