But I do not agree with "writing your CV so that what you have been doing looks like a continuation and expansion of your earlier SD consulting role and...." if as a sales manager IT you did not continue as SAP SD analyst (type role). Because it would be difficult to make it credible & going in to line manager position could be a natural progression, no harm doing that. Reetesh has some "uncomfortable" yet surely-shall-be-asked in future interviews, questions. Please prepare some answers for them. I think start with ONLY SD and then with time and training expand to other modules. You might be having varied process knowledge (sales process, returns, credits, free delivery etc. etc.) that would be your strength. Along with communicating with business, when you take up the role of a consultant. Maybe you know certain SD consultants, try to learn from them by having some meetings, also after training request them to forward your resume in their companies for jobs.
