Pick two modules instead of one. These days many employers are asking for
2-3 modules.

You are asking the wrong questions. It is not a question of which is the more promising but more a question of which one do you stand a chance of getting into? Your Oracle experience is not of much use in trying to break into the SAP market. The systems are not alike. Your apparent lack of accounting experience just about rules out FI-CO completely, because these modules are for people who are every strong in accounting and finance, often qualified accountants with many years of experience. FI-CO will always be in demand as it is THE core that everything else feeds into.

Your experience tends towards either SD or MM, and I would say more SD than MM, although the Ariba stuff might be more MM oriented. I would say rank the modules in this order:- SD, MM, CO, FI, HR. The real challenge is going to be getting a job in any of them afetr you have done your corse, and I think it would be better to see if you have any chance whatsoever of getting a job before spending money on training which may prove to be an expensive waste of time.
